SPINACH-APPLE TOSS WITH MINT
DRESSING
 
1/2 c. salad oil
1/4 c. lemon juice
1 tbsp. green onion, sliced
1 tsp. sugar
1/2 tsp. salt
Dash pepper
1/2 tsp dried mint, or 1 tbsp. fresh
10 oz. fresh spinach (8 c.), torn in sm. pieces
2 med. apples, cored and sliced
1 sm. cucumber, sliced
1/3 c. radishes, sliced
2 tbsp. shelled sunflower seed

In a screw-top jar combine oil, lemon juice, onion, sugar, salt, mint and pepper. Cover, shake well and chill. In a large salad bowl combine spinach, sliced apple, cucumber, radishes and sunflower seed. Shake dressing; pour over salad and toss to coat. Makes 8-10 servings.
