BROCCOLI QUICHE 
Pie crust or crustless
3 beaten eggs
1 1/2 c. milk
1/4 to 1/2 c. chopped green onion
1/4 tsp. salt
1/8 tsp. pepper
Dash of nutmeg
1 tbsp. flour
1 1/2 c. frozen or fresh broccoli
1 1/2 c. shredded Swiss cheese

Mix eggs, milk, onion and spices. Mix flour and cheese together, then spread onto crust. Drop broccoli around cheese. Pour in egg mix. Bake at 325 degrees for 35-40 minutes. Insert knife for doneness. If knife is clean, it is ready. Serve with fruit. Serves 6-8. OPTIONAL: Use spinach instead of broccoli.

I made this easy recipe however found that at the temp of 325-it took twice as long to cook (1hr. 20 minutes) so the second batch (still only 1 pie at a time) I bumped up to 350°F and it still took 1 hour to complete cooking. Delicious and simple recipe though - just increase the temp and the cooking time.
