BROCCOLI-BACON QUICHE 
2 single crust 10-inch pie shells, unbaked
2-4 slices bacon
1 onion, chopped
butter to saute (optional)
1 (10 oz.) pkg. frozen broccoli, thawed
6 eggs
2 c. evaporated milk
2 c. regular milk
1 tsp. salt
Dash of pepper
Dash of nutmeg
2 c. grated Swiss cheese

Prick pie crusts and bake at 400 degrees for 10 minutes. Fry bacon, drain and crumble. Saute onion in bacon drippings or butter. Spread thawed broccoli in bottom of pie crusts. Beat eggs; add evaporated milk, regular milk, seasonings and cheese.

Pour into shells and bake at 375 degrees for 45-50 minutes or until tests done. Let set 5-10 minutes before cutting. Serves 8-10.

If made ahead, can be reheated just before serving.
