ROSE'S BAKED CORNISH HENS 
4 Cornish hens
6 tbsp. butter
1/4 c. onion, chopped
1/2 c. celery, chopped
2 sm. cans mushrooms, drained
2 c. rice, cooked
Dash of pepper
1 tsp. salt

Melt butter and saute mushrooms. Add onions and celery. Cook until tender and yellow. Mix in rice and seasonings. Pack into Cornish hens loosely. Season hens with sage, oregano, poultry seasoning, etc. Bake at 350 degrees until brown and tender.

NOTE: Can also be done in your microwave according to your microwave poultry directions.

Since microwave ovens vary in power, you may need to adjust your cooking time.
