STUFFED CORNISH HENS | |
2 cornish hens DRESSING: 1 pkg. Rice A Roni 3 tbsp. butter 1/2 c. chopped onion 1/2 c. chopped celery 1/2 c. chopped green pepper 2 tsp. sage GLAZE: 1/4 c. currant jelly 1/2 c. sherry 2 tsp. grated orange rind Dressing: Brown Rice A Roni in butter, add chopped vegetables and cook for 3 minutes. Add 1 1/2 cups water to rice mixture and cook for 15 minutes or until 1/2 done. Allow rice to cool. Add sage to rice. Stuff 2 cornish hens with rice dressing and bake at 350 degrees until done, approximately 1 1/2 hours. Glaze: Combine all glaze ingredients and heat until jelly melts. Brush hens with glaze and bake 5 minutes more or until golden brown. |
