CORNISH GAME HENS WITH SWEET
POTATO STUFFING
 
4 to 5 med. sweet potatoes
1 egg
1/2 c. butter
1 tsp. cinnamon
1/2 tsp. nutmeg
Pecans, optional
4 cornish game hens

Peel, cube and boil sweet potatoes until they are soft. Approximately 25 to 30 minutes. Drain potatoes. Mash with egg, butter, and spices. Stir in pecans if desired. Stuff cornish hens and bake according to package direction.
