1 c. rice
1 env. Italian salad dressing mix
1 can cream of chicken soup
2 Cornish game hens
Spread rice in 3 quart shallow baking pan and bake at 375 degrees for 15 minutes until golden. Stir occasionally. Combine salad dressing mix with 2 1/2 cups boiling water and chicken soup. Stir this into the rice. Cut hens i half, lengthwise. Season with salt and pepper, if you desire. Place hens, cut side down on top of rice. Cover dish with foil. Bake at 350 degrees for 1 hour, uncover, and bake 30 minutes longer until rice and chicken are tender.
