SPANISH RICE 
2 c. uncooked white rice
5 tbsp. butter
4 c. sliced onion
1 tbsp. salt
4 cans (1 lb. size) tomatoes
2/3 diced green pepper
4 tsp. sugar

Cook rice according to directions. In skillet saute onions in butter. Add salt, tomatoes, green pepper and sugar. Simmer uncovered for 15 minutes. Add rice and mix. Serves 10 to 12.
