SPANISH RICE AND STUFFED PEPPERS 
2 c. minute rice
1 lb. ground beef
1 sm. onion
3/4 tbsp. chili powder
1/4 tsp. salt
1/4 tsp. pepper
1 (1 lb. 12 oz.) can whole tomatoes, mashed
2 med. green peppers
1 sm. can tomato sauce

Brown ground beef, onion, seasonings, tomatoes, and tomato sauce for 1/2 hour on medium heat at first, then simmer. Cook rice as directed. Mix in with browned ground beef mixture and stuff peppers and lay on remaining rice mixture. Bake for 1 hour at 375 degrees. Serves 4.
