FAJITA CASSEROLE 
1 lb. beef top round steak or fajita meat
1 (15 oz.) can refried beans (best is Taco Bell)
2 cups cooked rice (I use Mexican style)
3 to 5 flour tortillas, cut in half
Velveeta cheese, to taste

Preheat oven to 350°F.

In a casserole pan line the bottom of the dish with flour tortillas. Add a layer of beans and a layer of meat. Then another layer of tortilla, a layer of beans, and a layer of rice and cubed Velveeta cheese. Then add one more layer of tortilla and Velveeta cheese, meat, and beans. Add just a little more cheese.

Cover with foil over and bake at 350°F for 25 to 40 minutes.

Note: To check if done take a knife and poke it in the middle to the bottom and if knife is hot then it’s done.
