FAST AND EASY BEEF FAJITAS 
2 lb. tender sliced steak
3 green bell peppers
2 large onions
2 (10 oz. ea.) cans Rotel tomatoes (I use extra hot)
2 env. fajita seasoning
2 pkgs. tortillas
1 pkg. shredded Mexican "fiesta" blend cheese
dairy sour cream

Cut steak into slices, cut onions and peppers into strips and set vegetables to side.

In a large skillet combine steak, 1 pack of fajita seasoning, and 1 cup of water until steak is browned.

In a large pot combine peppers, onions, steak, and remaining pack of seasoning mix. You may need to add a little more water to cover vegetables. Cook on medium heat until peppers and onions start to get tender. Add Rotel tomatoes and return to a boil for 2 to 3 minutes.

Serve with a slotted spoon (makes a lot of juice) on flour tortillas and add cheese and dairy sour cream as desired.
