MICROWAVE REUBEN CASSEROLE 
1 (16 oz.) can drained sauerkraut
2 c. shredded Swiss cheese or several slices
2 medium tomatoes, sliced
1/2 c. Ritz cracker crumbs
1 (12 oz.) can corned beef, broken in small pieces
1/2 c. salad dressing
1/4 c. Thousand Island dressing
4 tbsp. butter

Place sauerkraut in 1 1/2-quart glass casserole. Top with beef, then the cheese. Combine salad dressings and stir; spread over cheese. Top with tomato slices. Set aside.

Place butter in small glass bowl. Microwave for about 1 minute on High or until melted. Stir in crumbs. Sprinkle crumbs over top. Microwave for 15 to 17 minutes on High or until heated through. Let stand 5 minutes.

Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
