POTATO REUBEN CASSEROLE 
Instant mashed potatoes (8 servings)
1 can (16 oz.) sauerkraut
2 thin sliced green onions
2 c. corned beef, cut up
4 oz. Swiss cheese, cut up (about 1 c.)
Paprika

Heat oven to 350 degrees. Prepare mashed potatoes. Stir in sauerkraut and onions. Spoon half of this mixture into ungreased 2 quart casserole; cover with corned beef and cheese. Top with remaining potato mixture, sprinkle with paprika. Bake uncovered 30 minutes.

IRISH CORNED BEEF CASSEROLE:

Substitute 4 cups shredded cabbage for sauerkraut. Cook cabbage in 1/2 cup boiling water and 1/2 teaspoon salt until tender. Drain and add to potato mixture.
