SOFT SUGAR COOKIES
2 c. oil
3 c. sugar (half brown)
2 c. buttermilk
2 tsp. baking soda
1/2 tsp. salt
6 c. flour (Gold Medal)
6 tsp. baking powder
3 tsp. vanilla

Beat oil, sugar, and eggs until thick. Add buttermilk and soda. Add dry ingredients and vanilla. Drop by spoon onto greased and floured cookie sheet. Bake at 375-400 degrees for 8 minutes.

Frost if desired. Mixture will be thin. Makes 6 dozen. My mother's favorite cookie. I used to like to take these along when we went to see her and she would say "that frosting tops it off just right."

FROSTING:

1 c. white sugar
1 c. brown sugar
1 c. cream
1 tsp. clear Karo
Dash of cream of tartar

Mix together in a 2-quart saucepan and put on burner on low until sugar is dissolved, then on medium until thermometer shows soft ball (230 degrees).

Remove from heat and let cool until you can easily put palm on bottom of pan without burning. Beat until it is of spreading consistency. Should lose its gloss.

A very smooth frosting. This is a real family favorite.
