MEXICAN LASAGNA 
1 lb. ground beef
1/2 c. each green pepper and chopped onion
1 (24 oz.) jar salsa
1 (8 oz.) can corn, drained
1 tsp. each chili powder and cumin
10 corn tortillas (6-inch)
16 oz. cottage cheese (small curd)
4 oz. sharp Cheddar cheese

Brown meat, onion and pepper; drain. Add salsa, corn and seasonings. Layer 1/2 meat sauce, 1/2 of the tortillas and 1/2 of the cottage cheese in a 13 x 9 baking dish. Repeat layers, ending with meat sauce. Sprinkle with cheese.

Bake at 375°F for 30 minutes.
