PUMPKIN CAKE | |
3 c. flour 2 tbsp. baking powder 1 tsp. salt 2 tsp. baking soda 3 tsp. cinnamon 1 pkg. dates (3/4 c. chopped) 2 c. sugar 1 can pumpkin pie 1 1/4 c. oil 4 eggs, beaten 1/2 c. walnuts Raisins Sift dry ingredients; set aside. Blend sugar and eggs, add pumpkin and oil into egg batter, blend good. Add dry ingredients. Mix well and pour into large tube pan (ungreased) for 1 hour in 350 degree oven. Loaf or round pan (greased) 350 degrees for 45 minutes. Frost with cream cheese frosting. CREAM CHEESE FROSTING: Blend together with mixer 1 cup butter, 8 ounce package cream cheese. Mix in gradually 1 pound box confectioners' sugar. Add teaspoon vanilla. Fold in 1/2 cup chopped walnuts. |
