BLUEBERRY MUFFINS 
2 eggs
1/3 c. vegetable oil
1/3 c. sugar
1/4 c. maple syrup
1 1/2 c. skim milk
2 c. flour
1 tbsp. baking powder
1/2 tsp. salt (opt.)
1/2 c. unprocessed bran flakes
1 1/2 c. blueberries

In large bowl beat eggs and add the oil, sugar, syrup and milk; mix well.

In medium bowl, stir flour baking powder and salt. Add flour mixture to liquid mixture. Blend well.

Fold in bran flakes and blueberries. Divide batter among 12 to 24 greased muffin cups, filling each 2/3 full.

Bake in preheated 375 degree oven for 25 minutes or until lightly browned.
