“FRIED EGGS IN BELL PEPPER RINGS” IS IN:

FRIED EGGS IN BELL PEPPER RINGS 
A colorful and creative way to serve your eggs! They would make a lovely addition to your Christmas brunch using a combination of red and green bell peppers. Orange and yellow bell pepper rings will have the finished eggs adding "sunshine" to your breakfast, regardless of what the weather outside may be!

1 large bell pepper, or 2 small, cored
Nonstick cooking spray, for preparing the pan (or butter if you prefer)
6 eggs
Salt and pepper, to taste
Parmesan cheese, grated (optional)
Paprika, to taste

Cut the bell pepper horizontally in slices that resemble rings. (About 1/4 inch thick.)

Prepare a skillet with a light layer of butter or nonstick cooking spray. Place 6 of the bell pepper rings in the skillet over medium heat. Crack an egg into each ring and allow it to spread out to fill the bell pepper ring. Season the eggs with salt and pepper to taste.

If you like your eggs soft, cook over low heat for 3-5 minutes, or until the eggs are cooked to preference.

If you like your eggs hard, break up the yolk for even cooking. Cook 6-9 minutes, or until the eggs are cooked to preference.

Sprinkle with Parmesan cheese and paprika; flip if you like it cooked over-easy!
