PRIZE WINNING LEMON PIE 
1 cooled, baked pie shell
1 1/2 c. sugar
6 tbsp. cornstarch
1 1/2 c. boiling water
3 egg yolks
3 tbsp. butter
4 tbsp. lemon juice
1 1/2 tbsp. grated lemon rind

For stiffer filling, use 7 tablespoons starch.

MERINGUE:

3 egg whites
1/4 tsp. cream of tartar
6 tbsp. sugar

Mix starch and sugar in double boiler. Blend in boiling water. Cook over direct heat, stirring constantly. Beat yolks slightly. Then blend into them a little of hot mixture. Then add the yolks and mix well. Pour into crust.

Beat and fix meringue and add. Bake until desired brownness. This is another favorite recipe of the Johnson family.
