SPICED APPLE BUTTER 
1 1/2 lb. coarsely chopped apples
1 1/4 c. hard cider
Light brown sugar
1/4 tsp. ground cloves
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg

In large saucepan cook apples, water and cider over low heat until apples are very soft. In food processor/blender, process apples and liquid to a puree. Measure 1 1/3 cups sugar for each 2 cups puree.

In large saucepan, cook puree over low heat 30-40 minutes until mixture resembles thick cream. Add spices and sugar. Stir until sugar dissolves. Simmer gently, stirring often, until liquid evaporates. Cool.
