BITE - SIZE CUPCAKES 
1 stick butter
1 1/2 oz. unsweetened baking chocolate
1 c. sugar
2 eggs, beaten
2/3 c. sifted all-purpose flour
1 tsp. vanilla
1 c. chopped pecans
Dash salt

Preheat oven to 350 degrees. Melt butter and chocolate together over low heat. Remove from heat and pour over sugar. Add remaining ingredients and blend well.

Place mini size cups on cookie sheet and fill half full, using about 1 teaspoon of batter. Bake 8-10 minutes. Cool and frost.

FROSTING:

4 tbsp. butter
1/2 oz. baking chocolate
2 c. sifted powdered sugar
Cold coffee

Melt together butter and chocolate. Remove from heat. Gradually add 2 cups sifted powdered sugar and enough cold coffee to mix until smooth. Spread on cupcakes. Makes 70-80 cupcakes.
