REFRIGERATOR BRAN MUFFINS 
1 1/2 c. sugar
1/2 c. shortening
2 eggs or 1/2 c. Egg Beaters
2 c. flour & 1/2 c. Oat Bran
2 1/2 tsp. baking soda
1/2 tsp. salt
2 c. buttermilk
1 c. boiling water
1 c. 100% Bran cereal with oats
3/4 c. seedless raisins
2 c. All Bran cereal

Cream sugar and shortening; add eggs one at a time mixing well after adding each. Add flour, soda, salt, buttermilk and mix until smooth.

Pour boiling water over 100% Bran and let stand until bran has absorbed all of the water and cooled slightly. Blend into batter, add raisins and All Bran. Mix thoroughly. Refrigerate batter covered. Will keep 5 weeks.

When ready to bake, dip batter from container (do not stir) into greased muffin tin. Bake in preheated oven at 400 degrees for approximately 20 minutes. In microwave 2 1/2-3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
