REFRIGERATOR BRAN MUFFINS 
2 1/2 c. all-purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
3 c. whole bran cereal
1 c. boiling water
3 eggs, beaten
1/2 c. butter
3/4 c. powdered milk
2 c. buttermilk
3/4 c. honey
Juice of 1 orange
1 (10 oz.) box chopped dates or 1 c. raisins
2 tbsp. orange rind

Mix flour, baking soda, baking powder, set aside. Combine bran cereal and butter, add boiling water. Stir until butter melts. Add milk and eggs. Mix well. Add remaining ingredients to bran mixture. Add flour to bran mixture. Stir until moistened. Bake at 400 degrees for 20 to 25 minutes in paper-lined tins. Makes 24 muffins. Tightly covered, this dough will keep for 4 weeks in the refrigerator. You need only to cook 1 or 2 at a time.
