WHOLE WHEAT BANANA BREAD 
2 c. whole wheat flour
1 tbsp. wheat germ
1 tsp. baking soda
1/2 tsp. salt
2 eggs
2 c. cut up ripe bananas
1/2 c. honey
1/4 c. vegetable oil
1 tbsp. lemon juice
1/2 tsp. vanilla
1 c. chopped walnuts

Measure flour and wheat germ, soda and salt into large bowl. Stir to blend. Combine eggs, banana, honey, vegetable oil, lemon juice and vanilla in blender. Pour over flour mixture. Add walnuts. Stir just until blended.

Pour into a greased and floured 8x5x3 loaf pan. Bake at 350 degrees until sides pull away from pan and pick inserted in center comes out clean, 45-55 minutes. Cool on rack before removing from pan.

This wheat sugarless banana bread was really good. I tweaked it a little by adding butter flavoring with the vanilla. And I used 1/8 cup of oil and 1/8 cup of apple sauce and I added a little oats for fiber. Baked up very nicely in one hour. I also used the wheat germ too. It is a dark bread, but that is how it should be. Very good!
