SALMON LOAF | |
1 (1 lb.) can salmon 2 slices white bread, cubed 2 eggs, slightly beaten 1/2 c. milk 2 tsp. finely chopped onion 1/4 c. finely chopped celery 1 tsp. finely chopped parsley 2 strips bacon Mix all ingredients (including liquid from salmon) except bacon. Put in greased 6 x 9 1/2 inch casserole and arrange bacon on top, either by slices or cut pieces as desired. Bake uncovered at 350 degrees for 35-45 minutes or until it looks dry and baked on top. Note: May be made in individual servings in muffin tins. |
