SCALLOP KABOBS ITALIAN STYLE | |
36 sea scallops or 1 lb. 1 (5 oz.) pkg. lean smoked ham, cut in 36 (1/2 inch wide) strips Vegetable cook spray 2 garlic cloves or minced 1/4 c. lemon juice 2 tbsp. minced fresh parsley 3/4 tsp. dried whole oregano Wrap each scallop with strips of ham. Place 6 scallops on each skewer and set aside. Coat a small skillet with spray. Place on medium heat. Add garlic; saute until browned. Remove form heat and stir in lemon juice, parsley, oregano. Coat the grill rack with spray. Place on grill and cook about 9 minutes. Serve warm. Serves about 6. Serve with potato salad, bread and sherbet as dessert. |
