KABOBS 
1 lb. beef or lamb stew meat
4 tbsp. olive or vegetable oil
4 tbsp. lemon juice
1/2 tsp. thyme
1/2 tsp. salt
1 pkg. med. size mushrooms
1 lg. green pepper
Any other type of fruit or vegetable you prefer, like pineapple, carrots, etc.

Mix together the oil, lemon juice and thyme in a bowl with the stew meat. Let the meat sit in the marinade for as long as possible, preferably overnight or at least few hours. Stir occasionally.

Next place the meat on the skewers and place on a cookie rack in a shallow pan. Put the meat on the top shelf in the oven and turn on to 550 or broil for 5 minutes. Take out, turn over meat, baste with marinade and broil for another 5 minutes.

Take out of oven again to put the vegetables on, baste, return to oven for another 5 minutes. The ingredients can be varied by size to serve more people. This serves 4.
