SCALLOP KABOBS 
1/4 c. lite soy sauce
1/4 c. vegetable oil
1/4 c. white wine
1 tsp. sugar
1 garlic clove, minced
2 dashes hot pepper sauce
1 dash of black pepper
1 (2 inch) strip fresh orange, lemon, or tangerine peel

Desired amounts of: Seafood (scallops, shrimp, etc.), vegetables (green peppers, onions, etc.) and fruits (pineapple, tomatoes, etc.). Combine all ingredients in small bowl. Pour over any seafood favorite and let marinate 1 to 8 hours or longer depending on the amount of flavor desired. May also marinate pieces of zucchini, onion, etc. Thread marinated scallops (or other seafood) onto skewers with zucchini, tomatoes, onions, pineapple (fresh or canned), green pepper, etc. Grill until seafood is done.
