BUTTERMILK PANCAKES 
1 qt. buttermilk
4 eggs
4 tsp. baking soda
2 tsp. salt
4 tbsp. sugar
4 tbsp. oil
3 1/2 c. flour

Beat eggs. Add buttermilk. Stir in dry ingredients just enough to moisten. Batter will be lumpy. Overmixing makes the pancakes tough.

(Any leftovers, freeze on cookie sheets. store in baggies, pop in toaster to re- heat!)
