LEMON MERINGUE PIE | |
1 c. sugar 1/3 c. cornstarch 1 1/2 c. boiling water 3 egg yolks 1/3 c. lemon juice Grated rind of 1 lemon (1-2 tbsp.) 2 tbsp. butter 1. Mix sugar and cornstarch thoroughly. 2. Add boiling water while stirring constantly. 3. Stir until mixture boils (over direct heat) and cook 10 minutes (in a double boiler). 4. Remove from heat. 5. In bowl, mix yolks, juice, rind and butter. 6. Add hot mixture gradually. Cool. 7. Fill baked pie shell 8. Spread with meringue and bake at 325 until brown, 12-15 minutes. MERINGUE: 3 egg whites 6 tbsp. sugar 1. Beat egg whites until foamy. 2. Add sugar 2 tablespoons at a time, beating after each addition. 3. Continue beating until mixture stands in peaks. |
