SIMPLE SURE LEMON PIE 
1 c. sugar
2 tbsp. cornstarch
1 1/2 c. boiling water
1/2 tsp. salt
2 eggs, separated
2 tbsp. butter
1/3 c. lemon juice
Grated rind of 1 lemon
1 baked pie shell

Mix sugar and cornstarch; add to boiling water slowly, stirring constantly. Add salt. Cook until thick and clear. Remove from heat. Blend in beaten egg yolks slowly. Add butter. Mix well. Add lemon juice and lemon rind; stir well. Pour into pie shell. Prepare meringue using egg whites and additional sugar (2 tablespoons per egg white). Pile on top of pie, sealing to edge. Bake at 350 degrees until meringue is lightly browned.
