LEMON BARS 
CRUST:

2 c. flour
1/4 c. powdered sugar
2 cubes butter
Pinch of salt (opt.)

Cut butter into flour and sugar with pastry blender until fine and crumbly. Pat crust mixture into greased 9"x13" pan. Bake in preheated oven 12 to 15 minutes.

In blender mix:

4 eggs
7 tbsp. lemon juice
2 c. sugar
1/4 c. flour

Blend 10 seconds. Pour over partly baked crust and return to oven. Bake 25 minutes more. Cool on wire rack, then cut into bars.
