PASTA CHEESE SALAD 
10 oz. pkg. Tettucini
1/2 cup cottage cheese
1/2 cup creamy Italian dressing
1 tbsp. fresh chive

Cook tettucini, cool in ice water and drain. Place in bowl and fold in Italian dressing and cottage cheese. Sprinkle with fresh chive, and serve.

This is a nice, simple, fresh-tasting salad. I added a pinch of salt and sugar and about a cup of shredded Mozzarella cheese, and stirred the fresh chives into the salad. Next time I may add a clove of minced garlic. Would be a great summer side dish for grilled Italian sausages or other Italian-inspired meat entrees such as Chicken Piccata or Veal Parmesan.
