OVEN - BROWNED POTATO WEDGES 
4 med. baking potatoes
4 tbsp. melted butter
Salt

Preheat oven to 450 degrees. Peel potatoes and cut in half lengthwise. Slice each half into thirds down its length. Blanche the wedges for 3 minutes in unsalted rapidly boiling water. Drain and pat dry with paper towels.
