CHICKEN IN THE OVEN WITH POTATOES | |
8-10 chicken pieces, thighs, legs and breasts 4-6 potatoes, cut into eighths 1 (1 lb.) can tomatoes, crushed Olive oil Parmesan cheese Oregano Salt and pepper Garlic powder Using a 13 x 9 inch baking pan; spread 2 tablespoons olive oil in pan, place in chicken pieces; scatter cut up potatoes around chicken. Place tomatoes on top evenly on chicken and potatoes. Sprinkle salt, pepper and oregano on potatoes and chicken pieces. Then sprinkle on Parmesan cheese liberally. Pour about 2 tablespoons olive oil on top of entire pan of chicken and potatoes. Bake at 400 degrees for 1/2 hours. Drain liquid from pan and continue baking for another 40 minutes until potatoes are crisp. Serve with a tossed salad. Great for surprise guests! |
