OVEN - FRIED CHICKEN WITH POTATO SLICES | |
1 broiler fryer, quartered 2 eggs, slightly beaten 1 tsp. salt 3/4 tsp. pepper 1 c. crackermeal or bread crumbs butter 4 med. potatoes, sliced 1/2 inch thick Dip chicken pieces in the egg, then in mixture of next 3 ingredients. Brown quickly on both sides in 1 stick of butter in large skillet. Arrange chicken without overlapping in greased, shallow baking pan. Arrange potato slices around chicken. Drizzle chicken and potato with melted butter and bake at 350 degrees for 40 minutes or until potatoes and chicken are browned and tender. |
