EGGPLANT PATTIES | |
1 eggplant 2 eggs 1 green pepper, chopped 1 sm. onion, chopped 1/2 tsp. sage Salt to taste 1 tsp. soy sauce 1 c. bread crumbs Peel and cut eggplant into slices, boil eggplant until tender. Cool and squeeze water out of eggplant. In a large mixing bowl add all of the ingredients to the eggplant. Thoroughly mix and roll by hand to form patties. Fry in shortening until brown on both sides. |
