CUCUMBER SALAD | |
2 sm. cucumbers, grated but not peeled 1 sm. onion, grated 1 pkg. lemon gelatin 1/2 c. mayonnaise 1 tbsp. vinegar 1 pt. small curd cottage cheese 1/2 c. hot water 1/2 c. chopped pecans Drain as much liquid from cucumber as possible. Dissolve lemon gelatin in hot water; add vinegar. Add this mixture to mayonnaise, stirring to prevent lumping. Combine cucumber, cottage cheese, and onion; add to mayonnaise mixture. Add pecans and pour into mold. Chill several hours. Serves 6. This keeps well for several days. |
