GREEN PEPPER AND ONION BAKED
POTATOES
 
6 med. potatoes, sliced 1/2-inch thick
1 med. onion, chopped
1 med. green pepper, chopped
4 to 6 tbsp. butter, melted
salt and pepper, to taste

Using a pastry brush, place a thin layer of butter on a piece of aluminum foil large enough to wrap potatoes. Place a single layer of potatoes on foil. Sprinkle with salt and pepper. Place desired amount of onions and green peppers over potato layer. Brush potatoes with butter. Place next layer and repeat the process until potatoes are gone. Close foil over potatoes, place on cookie sheet or in shallow pan.

Bake at 350°F for 45 minutes to 1 hour until potatoes are fork tender.

Can also add other veg's... carrot, broccoli, even thin sliced garlic... sprinkle lightly with your favorite steak seasoning. This has many variations - is fantastic and requires no clean up.
