GREEN PEPPER & POTATOES 
8 med. potatoes, peeled & sliced
1 med. onion, chopped
1 green pepper, chopped
Salt
Pepper
1 stick butter

Place sliced potatoes in 9 x 13 inch pan. Add onion, green peppers and seasonings to taste. Stir all together. Slice the butter over top and cover with aluminum foil. Bake at 325 degrees for 1 hour.

Copied this recipe a while ago and did not make it until today. Incredibly easy and delicious! I made it with red peppers instead of green (because that is what I had on hand) and it was really good. Thanks for sharing this recipe.
