NEW POTATOES WITH BELL PEPPERS
AND GREEN ONIONS
 
2 1/4 lbs. red new potatoes
1 red bell pepper
1 yellow bell pepper
1 bunch green onions
1/8 lb. butter
2 oz. white wine
Salt and pepper to taste

Boil new potatoes in water until cooked, about 15 minutes. Remove and cool potatoes under cool running water. De-seed the peppers and dice. Chop green onions, discarding root ends.

Saute peppers in butter until they are soft and add potatoes and green onions, while stirring to prevent burning. Add wine and season with salt and pepper to taste and serve. Serves: 6. (Prep and Cooking Time: 20 minutes)
