NAN'S CHEESE STUFFED MEAT LOAF
3 pounds ground beef
4 eggs
3 c. bread crumbs
1 c. minced onion
1/2 c. minced green pepper
3 tsp. horseradish
1 tsp. salt
2 tsp. dry mustard
1/4 c. pet milk
1/4 c. catsup
snipped parsley and sharp shredded cheese

Beat eggs lightly with fork, lightly mix in beef, crumbs, onion, pepper. Add horseradish, milk, and catsup. Divide in 3 parts with cheese in each layer.

Bake about 59 minutes at 400°F. Invert loaf on jelly-roll pan. Sprinkle with more sharp cheese and return to oven for about 5 minutes. Just until it is a bit brown on top. This is nice served with apricots or brandied cherries and corn muffins.

This recipe is very old and came out of an old farmer paper in Iowa.
