CHEESE STUFFED MEATLOAF 
1 1/2 lbs. lean ground beef
1/4 tsp. black pepper
1/2 c. soft bread crumbs
1 tsp. Dijon mustard
1/2 c. chopped parsley
1/2 c. ketchup
2 tsp. Worcestershire sauce
1 tbsp. instant onion
2 tbsp. boiling water
1 egg, beaten
6 oz. sliced Mozzarella cheese
1/4 c. water

Combine beef, onion and pepper; set aside. Add boiling water to bread crumbs. Beat in egg and mustard and then add to meat mixture and mix well. Shape into a 12 x 9 inch rectangle on a sheet of waxed paper. Lay cheese over meat; sprinkle with parsley. Roll up in jelly roll fashion, beginning at the short end and lifting the paper to help roll. Press ends to seal. Transfer to 10 x 6 x 2 inch baking pan. Combine ketchup, water and Worcestershire sauce; spoon over meat roll. Bake at 350 degrees for 50-60 minutes. Serves 4-6.

My cousin made something like this years ago for a dinner party, but she added some spaghetti sauce into the meatloaf, then stuffed it with cheese. It was cut into slices to serve & looked very impressive.
