FRENCH PANCAKES 
3 eggs
1/2 c. sifted flour
1/2 tsp. salt
1/2 c. milk
2 tbsp. salad oil

Beat eggs long enough to mix yolks and whites. Add flour and salt; stir until smooth. Combine milk, and oil; stir into egg mixture until batter looks like heavy cream. Pour batter from cup or pitcher onto hot greased griddle. When little bubbles show up on top, turn and brown on other side. Spread with jelly or preserves. Roll up like tube and serve.
