GRIDDLE CAKES, FRENCH PANCAKES 
1 c. flour
6 tbsp. powdered sugar
Pinch salt
2 eggs
1 c. milk

Mix all together until well blended. Pour batter into a hot pan that has been greased with 1/8 inch oil. Cook pancakes until lightly browned and start to bubble; then flip over and cook a little more. Take out of pan and place on Scott towels to absorb grease. Serve hot, sprinkle with sugar and roll up to eat. Makes about 20 to 24 three inch round pancakes.
