FRENCH APPLE CAKE 
2 c. sugar
2 1/4 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
1 c. nuts
1 c. oil
3 eggs
1/2 tsp. salt
1 tsp. allspice
1 c. buttermilk
2 c. peeled, diced apples
1 c. raisins

GLAZE:

1/2 c. orange juice
1 c. confectioners' sugar
1/2 stick butter, melted

Soak raisins in hot water (approximately 30 to 40 minutes). Mix sugar, oil and eggs in a large bowl. Sift flour and all dry ingredients in a small bowl; turn gently. In a separate bowl, mix soda with buttermilk; add flour mixture to sugar mixture. Hand mix apples, raisins, nuts and vanilla. Put this entire mixture into a greased and floured baking pan. Bake for 1 hour at 350 degrees.

When the cake is finished, remove from oven and punch holes in top of cake with a knife. Mix orange juice, confectioners' sugar and butter to make glaze. Pour over cake while cake is still hot. May be served hot or cold.
