SAND TART OR TORTE 
1/2 lb. butter
1 c. sugar
5 egg yolks, beaten
1/2 tsp. lemon or orange extract
1 tbsp. rum (opt.)
2 c. flour, sifted
3 tsp. baking powder
5 egg whites, beaten

ICING:

Powdered sugar
Rum

Cream together first 5 ingredients. Sift flour and baking powder together and add alternately with egg whites to the egg mixture. Bake in loaf pan or springform pan in moderate, 350 degree oven until toothpick comes out clean. Serve plain or cut in half and spread lower layer with any kind of jam you prefer. Cover top with icing made of powdered sugar and a little light rum or brandy mixed to spreading consistency.
