CREAM OF BROCCOLI SOUP 
1 c. fresh or frozen chopped broccoli, cooked (reserving 1/2 c. cooked liquid)
2 tbsp. butter
2 tbsp. flour
1/2 tsp. onion powder
1/8 tsp. pepper
1 c. skim milk
2 tbsp. dry white table wine
Dash paprika

Mix broccoli in blender or force it through a fine strainer and set aside. Melt butter in saucepan. Add flour, onion powder and pepper. Cook and mix well. Gradually add milk, stirring constantly. Add 1/2 cup reserved vegetable liquid. Cook over medium heat, stirring until slightly thickened. Add broccoli, heat through. Shortly before serving add wine and sprinkle with paprika. Variation: Asparagus - use asparagus in place of broccoli or cauliflower.
