CHOCOLATE NUT CRUNCH | |
2 1/2 sticks butter 1 2/3 c. sugar 4 tsp. light corn syrup 1/4 c. water 1 1/4 c. coarsely chopped nuts (walnuts, pecans, or peanuts) 3/4 c. finely chopped nuts (use same as above) 8 oz. semi-sweet chocolate chips Candy thermometer Melt butter in heavy saucepan. Add sugar, syrup, and water. Cook over medium heat to 290-300 degrees (about 15-20 minutes). Stir frequently. Remove from heat and immediately stir in coarsely chopped nuts. Spread quickly on a 15 1/2 x 10 1/2 cookie sheet, pushing toward edges with a rubber spatula. Refrigerate until cool. Melt chocolate chips over very low heat. Spread over cooled candy mixture. Immediately spread finely chopped nuts. Cook again. Break into small pieces. |
