FETTUCINI ALFREDO 
1 lb. fettucini
1 1/2 c. half and half
5 tbsp. butter, cut into small pieces
Pinch ground nutmeg
1/4 tsp. black pepper
1 c. grated Parmesan cheese, divided

Cook fettucini according to package directions. While it is cooking, bring the half and half to a boil in a 12 inch skillet. Reduce heat and simmer, stirring constantly for 5 minutes. Remove from heat. Drain fettucini thoroughly in a colander and add to the half and half in the skillet. Over moderate heat, toss well, then add the butter, nutmeg, pepper and 3/4 cup of the cheese. Toss again to distribute the cheese evenly. Serve hot and pass the remaining 1/4 cup of cheese at the table. Serves 4.
